At the Sul Ross State University Meat Lab we focus on the area of animal anatomy and physiology in beef, sheep, and swine production. We also concentrate on carcass evaluation, slaughtering, processing, meat inspection, marketing, sausage manufacturing and the sale of meat.
The students gain hands-on experience with the livestock and carcasses to ensure experience after graduation. Students learn everything from slaughter, inspection and processing livestock. With the help of our experienced staff, students get a helping hand on learning about these processes.
The Meat Lab also does custom kills and inspected kills for the public. We also process the carcasses for minimal prices for the consumer. This enables students to learn the fundamentals of slaughter and processing. With the help of the community, Sul Ross State University's Meat Lab thrives and sends students out with more knowledge than before.
